01 - Dice carrots, potatoes, and onion; mince garlic. Cut beef chuck into uniform cubes.
02 - In a large skillet over medium-high heat, sear beef cubes on all sides until brown. Transfer to slow cooker.
03 - Add carrots, potatoes, onion, and garlic to slow cooker with beef. Stir in pumpkin puree, beef broth, pumpkin pie spice blend, salt, and black pepper until evenly mixed.
04 - Cover and cook on low heat for 8 hours or on high heat for 4 hours, until beef is tender and vegetables are cooked through.
05 - Taste and adjust seasoning if needed. Ladle stew into serving bowls and garnish with chopped parsley.
